Luxury dough

The name says it all – Dossche Mills mixes for luxury dough add some luxury to your range of products. This category of ready-to-use mixes is divided into risen puff pastry mixes and risen luxury dough.

A.    Risen puff pastry mixes

Star Pacrobeurre: A ready-to-use mix, specifically composed for the preparation of all products based upon risen puff pastry such as croissants, chocolate rolls and Danish pastries. Contains 10% butter and 10% sugar in a flour base. Applications: croissants, chocolate rolls, viennoiserie and Danish pastries.

Star Pacroplus: A ready-to-use mix for the preparation of sweet risen puff pastry. Flour base contains 10% added sugar. This mixture is powerful enough to guarantee dough storage in the freezer for up to 2 or 3 weeks. Applications: croissants, pain au chocolat, viennoiserie and sweet risen puff pastry.

Star Pacrovit: ready-to-use mixture for the preparation of risen puff pastry.  Contains 5 % sugar in a flour base.
Applications: croissants, chocolate rolls, viennoiserie, puff pastry buns and savoury snacks.

B.     Risen luxury dough

Star Briobeurre: A ready-to-use mixture for the preparation of risen luxury doughs on the basis of eggs and butter. Very rich in composition (25% butter, 45% egg and 9 % sugar based on the flour weight). Application: risen luxury doughs on the basis of eggs, sugar and butter, such as sugar bread, chocolate bread and small soft bread rolls.

Star Briofine: A ready-to-use mixture for the preparation of risen luxury doughs on the basis of eggs and butter. Flour contents based, this mixture contains 16% butter, 14% egg and 10% sugar based on the flour weight. Applications: raisin bread, sandwiches, swiss buns, brioches and waffles.

Star Briovit: A ready-to-use mixture, recommended for the preparation of a large assortment of risen luxury doughs. Briovit contains no fats and no eggs, meaning that the user can decide individually how rich the dough will be by choosing the quantity and quality of the fats and egg products himself.  Contains 7 % sugar based on the flour weight. Applications: brioches, raisin bread, sugar bread, soft sandwiches and boules de Berlin.

Star Doree: A ready-to-use mixture for the preparation of risen luxury doughs. Contains 7 % sugar and 9 % butter based on the flour weight.  Applications: brioches, sandwiches, sugar bread.

Star Silver: A ready-to-use mixture for the preparation of risen luxury doughs on the basis of vegetable fats and sugar. The mixture contains no eggs and ensures prolonged freshness of the final product. Contains 9 % sugar and 6 % butter (vegetable fat) based on the flour weight. Applications: raisin bread, sandwiches and sugar bread.

Star Vienna: A ready-to-use mixture for the preparation of risen dough. Contains 9% butter and 6% sugar based on the flour weight. Applications: small soft bread rolls, toast bread, milk bread and Vienna bread.
