Cleaning the wheat

The wheat is cleaned before it is ground. While cleaning, impurities such as dust, sand, straw, stones, weed seeds etc. are removed.

The goal of the subsequent moistening is conditioning the kernel in a way one can easily separate the endosperm (= the flour) from the bran. Grinding dry wheat causes the formation of fine brown dust that can no longer be separated from the flour.
