Prestarched flour

Amundsen

Amundsen is a prestarched flour. This flour absorbs six times its weight in water. It is mainly used for cold binding followed by a hot phase (e.g. cooking, pasteurising, etc.). 

The advantage of this flour compared to modified starches is its declaration of user friendliness. The product has only undergone a physical process and no chemical treatment. Amundsen does not have any E number but can be placed in the wheat flour category on a list of ingredients. 

Application:

bakery product mixes (puff pastry mixes, bread enhancement mixes), for the meat processing sector (water absorption), coatings, etc.
